Pleurotus ostreatus: A cold weather mushroom with a fleshy, firm, edible snow-white oyster-shaped cap. Oyster mushrooms are best when cooked with a dry saute method and can then be flavored to your liking and eaten by themselves, as a snack, or added to any dish. They are high in protein content, several B vitamins, and all the essential amino acids. A great substitute for chicken or pork and they have been known to lower cholesterol, shrink tumors, and reduce the development of plaque in major arteries.
